HANDLING INSTRUCTIONS: 1. REMOVE FROZEN DOUGH PIECES FROM CASE AND PLACE ON PAPER LINED SHEET PAN 6 X 4. COVER WITH PLASTIC. 2. PLACE PANNED ROLLS INTO RETARDER AND DEFROST OVERNIGHT. 3. REMOVE FROM RETARDER AND ALLOW TO STAND AT ROOM TEMPERATURE FOR APPROXIMATELY 15 MINUTES. 4. PROOF AT 95°F (35°C) AND 85% RELATIVE HUMIDITY UNTIL DOUBLE IN SIZE. 5. BAKE UNTIL GOLDEN BROWN. RECOMMENDATION OF OVEN TEMPERATURE AND BAKING TIME: a. RACK OVEN, 350°F (177°C) WITH 5 - 10 SECOND STEAM FOR 12 - 16 MINUTES. b. CONVECTION OVEN, 350°F (177°C) FOR 10 - 12 MINUTES. SPRAY WATER BEFORE PUTTING INTO THE OVEN. c. CONVENTIONAL: 375 - 400°F (190 - 205°C) for 10 - 12 MINUTES. SPRAY WATER BEFORE PUTTING INTO THE OVEN. 6. REMOVE FROM OVEN AND COOL.
