LARGE BATCH SMALL BATCH BUN BASE 50 LB 9 LB BREAD FLOUR 50 LB 9 LB WATER (46%) 46 LB 1 GALLON INSTANT DRY YEAST 1 LB 5 OZ 4 1/2 OZ OR *COMPRESSED YEAST 4 LB 13 OZ MIX: ADD WATER AND DRY INGREDIENTS INTO THE BOWL AND MIX 1 MINUTE IN LOW SPEED. THEN ADD INSTANT DRY YEAST AND MIX UNTIL DOUGH IS FORMED. CONTINUE MIXING IN MEDIUM SPEED UNTIL DOUGH REACHES FULL CLEAN UP ON BOTTOM OF BOWL. CONTINUE MIXING 3 MINUTES PAST CLEANUP. * WHEN USING COMPRESSED YEAST, ADD YEAST WITH THE DRY MIX AT THE START OF MIXING. ALSO NOTE: WATER CAN BE VARIABLE DUE TO SHOP CONDITIONS. FOR: 3 SPEED MACHINE: USE SPEEDS 1 AND 2. 4 SPEED MACHINE: USE SPEEDS 2 AND 3. DOUGH TEMPERATURE: 84 F BENCH TIME: DOUGH IS THEN STRIPPED, MOLDED LIGHTLY, AND GIVEN 15 TO 20 MINUTES RELAXATION TIME. MAKE UP: INTO DESIRED PRODUCTS. PROOF: GIVE 3/4 TO FULL PROOF WITH JUST ENOUGH MOISTURE TO PREVENT CRUSTING. BAKE: 390 F TO 400 F FOR 12 TO 15 MINUTES. STORE IN A DRY PLACE
