LARGE BATCH SMALL BATCH BUN MIX 50 LB 19 LB WATER (44%) 22 LB 8 OZ 1 GALLON INSTANT DRY YEAST 13 1/2 OZ 5 OZ OR *COMPRESSED YEAST 2 LB 8 OZ 15 OZ MIX: ADD WATER AND DRY INGREDIENTS INTO THE BOWL AND MIX 1 MINUTE IN LOW SPEED. THEN ADD INSTANT DRY YEAST, AND MIX UNTIL DOUGH IS FORMED. CONTINUE MIXING IN MEDIUM SPEED UNTIL DOUGH REACHES FULL CLEANUP AT THE BOTTOM OF THE BOWL. CONTINUE MIXING 3 MINUTES PAST CLEANUP. *WHEN USING COMPRESSED YEAST, ADD YEAST WITH THE DRY MIX AT THE START OF MIXING. ALSO NOTE: WATER CAN BE VARIABLE DUE TO SHOP CONDITIONS. FOR: 3 SPEED MACHINE: USE SPEEDS 1 & 2 4 SPEED MACHINE: USE SPEEDS 2 & 3 DOUGH TEMPERATURE: 84 F. BENCH TIME: DOUGH IS THEN STRIPPED, MOLDED LIGHTLY, AND GIVEN 15 TO 20 MINUTES RELAXATION TIME. MAKE UP: INTO DESIRED PRODUCTS. PROOF: GIVE 3/4 TO FULL PROOF WITH JUST ENOUGH MOISTURE TO PREVENT CRUSTING. BAKE: 390 F TO 400 F FOR APPROXIMATELY 12 TO 15 MINUTES. STORE IN A COOL DRY PLACE.
