Tips & Handling
Step One: Remove coffee cake from the freezer and Place on paper lined pan. Step Two: Place on rack and cover. Place in cooler for next day’s needs. Step Three: The following morning lightly flour the bench. Step Four: Place the coffee cake on the bench with the seam down. Step Five: Lightly flour the top of the pastry. Step Six: Lightly press down the pastry so that the thickness of the cake is equal all over. Step Seven: Using the bear claw cutter, cut the edge of the coffee cake approximately 3/4 inch toward the center and all the way to the bench. Step Eight: Pick up the pastry with both hands and form it into the aluminum pan. Step Nine: Seal the two ends together. Step Ten: Arrange 3 coffee cakes on a paper lined baking sheet pan. Step Eleven: Put in the proof box for approximately 30 minutes Step Twelve: Remove from the proof box and Lightly spray with water. Step Thirteen: Sprinkle 1 ounce of streusel mix on top of coffee cake Step Fourteen: Proof coffee cake 45 to 60 minutes. Step Fifteen: Bake at 350°F for 18 to 22 minutes, or until light golden brown.
