PLACE DONUTS ON FRYING SCREENS. 4. PROOF AT 100 F (38°C), 60% HUMIDITY, UNTIL TOP OF TEMPLATE IS REACHED. 5. LET DONUTS DRY FOR 15 MINUTES AT ROOM TEMPERATURE (RACK TIME). 6. FRY AT 375°F (190°C) FOR 50 SECONDS PER SIDE. 7. LET COOL ON SCREEN.
