Tips & Handling
1. KEEP PRODUCT FROZEN AT 0 F OR BELOW UNTIL READY TO USE. 2. REMOVE CASE FROM FREEZER AND PAN DOUGH PIECES 5 X 5 ON A PARCHMENT LINED HALF SHEET PAN. SPRAY THE SIDES OF THE PAN WITH PAN RELEASE TO PREVENTROLLS FROM STICKING. 3. COVER THE ENTIRE PAN WITH PLASTIC TO PREVENT ROLLS FROM DRYING OUT. 4. PLACE IN A RETARDER AND ALLOW DOUGH TO THAW OVERNIGHT. 5. REMOVE THE PRODUCT FROM THE RETARDER, AND ALLOW IT TO WARM TO ROOM TEMPERATURE (15-20 MINUTES). 6. PLACE IN A PROOFER (95 F, 85% HUMIDITY) UNTIL ROLLS HAVE DOUBLED IN SIZE AND ARE TOUCHING EACH OTHER. 7. BAKE IN A PREHEATED 325 F CONVECTION OVEN FOR 10-12 MINUTES OR UNTIL GOLDEN BROWN. 8. REMOVE FROM THE OVEN AND COOL.
