Tips & Handling
Handling Step 1: Breakout Place 24 frozen rolls (4x6) on lined sheet pan that has been coated lightly with non-stick pan spray. Cover and place in cooler for 15-24 hours Remove Rack from cooler Step 2: Proofing Keep rack covered at all times during floor proofing. Floor proof for 30-90 minutes or until rolls are double in size (depends on bakery conditions) Spray rolls several times during the floor time to keep the dough moist Step 3: Baking Place Rack in 375°F. Oven with 20 seconds steam. Bake for 12-15 minutes until golden brown. Rolls should be touching each other during baking. Step 4: Packaging Once product is cooled, place 8 rolls ( 2 stacks of 4) in 12” x 16” x 4” poly bag and close with twist tie. Center PLU labels in the middle of the package.
